Vinification & Maturation:

• Grapes are delicately pressed and undergo a careful settling process.
• Fermentation takes place at a low temperature in stainless steel vats, with each variety kept separate until final blending.
• After blending and bottling, the secondary fermentation and ageing occur in Pol Roger's deep cellars, followed by hand riddling.
